Learn to make authentic South Indian filter coffee (kaapi) at home. Strong, aromatic, frothy coffee the traditional Tamil way.

Ingredients

  • 2 tbsp filter coffee powder (chicory blend)
  • 1/2 cup boiling water
  • 1 cup hot milk
  • Sugar to taste

Instructions

    Place coffee powder in the upper chamber of the filter.

    Pour boiling water over the coffee powder.

    Cover with the pressing disc and close the filter lid.

    Let the decoction drip into the lower chamber (takes 10-15 minutes).

    Once decoction is collected, you should have about 1/4 cup of strong coffee.

    For each cup: Take 2-3 tbsp of decoction in a tumbler.

    Add sugar as per taste.

    Pour hot milk over it until tumbler is 3/4 full.

    Pour the mixture between tumbler and davara (small bowl) from a height 8-10 times.

    This creates froth and cools the coffee to drinking temperature.

    Serve in the davara (traditional style) or tumbler.
