

Payasam Recipe - Traditional Tamil Sweet Milk Dessert

Ingredients
- 1/4 cup raw rice
- 4 cups full-fat milk
- 1/2 cup jaggery (or sugar)
- 2 tbsp ghee
- 10-12 cashews
- 10-12 raisins
- 1/4 tsp cardamom powder
- A pinch of saffron strands (optional)

Wash rice and soak for 15 minutes. Drain and set aside.

In a heavy-bottomed pan, bring milk to a boil. Reduce heat and simmer.

Add the soaked rice to the milk and cook on low heat, stirring occasionally.

Cook for 30-35 minutes until rice is completely soft and broken down.

Mash the rice with the back of a ladle to get a creamy consistency.
